Date Nut Chews

Ingredients

1 pound (2 ½ cups) pitted dates. chopped (or use food processor)

¾ cup sugar

½ cup butter

1 egg
-
1 tablespoon milk

1 teaspoon vanilla

½ cup chopped nuts
-
2 cups Rice Krispies
-
2 cups finely chopped nuts or shredded coconut
Directions
- Mix dates, sugar and butter in a medium saucepan over low heat. Stir as the butter melts then remove from heat.
- Place the egg in a small bowl and whisk well with a fork, add milk, vanilla and salt. Add to the date mixture. Bring to a simmer over medium low heat. Cook for 4 minutes, stirring until the dates are soft and all the ingredients are blended together. Remove from heat and stir in the nuts.
- Cool for five minutes then stir in the Rice Krispies.
- When cool enough to handle, form into 1 inch balls or use small ice-cream scoop sprayed with non-stick cooking spray. Then roll in finely chopped nuts or shredded coconut.
