Dipped apple date bites — With just a few ingredients, date lovers can make this scrumptious and wholesome recipe that is perfect for snack time, a pre- or post-workout bite, or as an appetizer to bring to a spring brunch or tea party. 

Simply chop apples into approximately one-inch square bites. Slice open dates to remove the pit. Then press nut or sun butter into the “core” of each date and place an apple piece in each one. Then poke a toothpick all the way through and dip the bottom of each bite into melted dark chocolate (with an optional touch of coconut oil). Place on parchment paper, sprinkle with flaky sea salt or Maldon salt, and allow to set before serving or eating.

Peanut butter “eggs” — As an alternate to Reese’s peanut butter eggs this season, try this version using dates. Mix peanut butter and almond flour to create a soft paste-like filling. Slice dates to remove the pit and add some filling. Then enclose the filling and hand-form each date to create an egg shape. With a toothpick or a fork, submerge each “egg” in a bowl of melted dark chocolate. Shake off extra chocolate and allow to set. Then decorate each egg with drizzles of colored melts, sea salt, coconut shavings or crushed nuts.

Date dip with cinnamon sugar crisps — Combine labneh or plain Greek yogurt with cream cheese, a little sugar, a drizzle of vanilla extract and a bit of juice from a lemon or an orange. Set aside. Pit and slice dates, then sauté them in some melted butter, allowing them to get soft, nutty, and toasty. Next, pour the dates and brown butter over the dip mixture and top with a drizzle of honey, a sprinkle of sea salt, some lemon or orange zest, and crushed nuts, such as pistachio or macadamia. Serve with cinnamon sugar crackers to scoop and enjoy!
