What are Tepary Beans?
Tepary beans have deep roots in the Southwest’s “ancient history.” Because they grow well in the desert heat, alkaline soils and even in times of drought, they are an ideal crop for Arizona’s southern regions. They are actually some of the most tolerant crops of drought and heat throughout the world. There are also a variety of tepary beans‚ including white and brown, as well as black and speckled blue — each with its own distinct characteristics.
High in protein and soluble fiber, all varieties of tepary beans are a healthy choice for those that need to manage their cholesterol or diabetes. In fact, tepary beans are even higher in protein and other nutrients than some of their counterparts including pinto and kidney beans.
While white tepary beans have a trace of sweetness, brown tepary beans are known for their earthy taste. A very versatile crop, tepary beans can be easily swapped into recipes that call for nearly any type of bean. Like most other varieties of beans, they can be soaked overnight and then cooked on the stove or in a crock pot until they are fork tender (or as tender or firm as desired).
Arizona’s Ramona Farms is one of the farms that is working to bring back the tepary bean. While early settlers grew tepary beans for thousands of years in Arizona (as well as other areas in the Southwestern United States and Mexico), the bean was at risk of becoming obsolete as big box grocery stores replaced native farmers.
However, with more interest in indigenous and native foods in recent years, important (and delicious) crops like tepary beans are making a comeback! They are ideal to be planted here in Arizona, generally in the mid-summer with its monsoon rains and they can withstand drought as they mature. They can even climb if given proper support.
Cooking with tepary beans is only limited to one’s creative or taste preferences! Their mild flavor complements many foods and can be pureed with potatoes or served as a ragout or made into soup with a variety of vegetables. For those that prefer vegetarian dishes or vegan dishes, tepary beans also provide a hearty dose of protein to round out a meal.
