So why not get into the kitchen and whip up some delicious fall flavors? These pumpkin treat ideas can help it feel a little more like fall until the weather gets the memo!

Pumpkin Spice Cold Foam
Pumpkin spice lovers are in their heyday, but those coffee shop sips can add up day after day. For an at-home alternative, make some simple pumpkin cold foam that can turn any coffee drink into a coffee shop copycat.

Pumpkin spice cold foam ingredients:

  • 1/3 c. milk of choice
  • ¾ c. heavy whipping cream
  • 1/3 c. sweetened condensed milk
  • ¼ c. 100% pure pumpkin
  • 1 tsp. pumpkin pie spice
  • 1 to 2 tsp. vanilla extract
  • 2 Tbsp. date syrup, maple syrup or vanilla syrup (like Torani)

Directions:

  1. Combine all ingredients into a deep bowl, then place in the freezer for five to 10 minutes.
  2. Remove from freezer, add to a blender and mix until a foamy, whipped consistency has been reached.
  3. Pour a cold brew or iced coffee over ice and top with the desired amount of pumpkin spice cold foam.
  4. Sprinkle with additional pumpkin pie spice and enjoy!

No-Bake Pumpkin Pie Cookies
No need to turn on the oven to get a taste of fall. These easy and wholesome cookies come together in no time... and will be gone just as fast.

No-bake pumpkin pie cookies ingredients:

  • 1 c. old-fashioned oats
  • ½ c. 100% pure pumpkin
  • ¼ c. almond butter or peanut butter
  • ¼ c. date syrup or honey
  • 1 tsp. vanilla extract
  • 1 tsp. pumpkin pie spice
  • ¼ c. fresh dates, pitted and diced

Directions:

  1. Mix all ingredients in a large bowl until well combined.
  2. Using a cookie scoop, make evenly sized balls of mixture and place them on a baking sheet lined with parchment paper.
  3. Use the back of a spoon to gently flatten each cookie.
  4. Place the baking sheet in the refrigerator for 30 to 45 minutes to allow the mixture to set.
  5. Add a dollop of whipped cream, diced dates, and a sprinkle of pumpkin pie spice to each cookie before serving.

Pumpkin Truffle Bites
For a sweet bite of fall, these truffles are easy, delicious, and adorable too.

Pumpkin truffle bites ingredients:

  • 4 oz. white chocolate chips
  • 1 Tbsp. powdered sugar
  • 1/3 c. 100% pure pumpkin
  • ½ tsp. pumpkin pie spice
  • ¼ tsp. cinnamon
  • 1 ½ c. shortbread cookie crumbs

For the coating:

  • 2 Tbsp. granulated sugar
  • ¼ tsp. pumpkin pie spice
  • ¼ tsp. cinnamon
  • Mini milk or dark chocolate chips for decorating (optional)

Directions:

  1. Melt the white chocolate in a double boiler or in the microwave in 20-second intervals, stirring in between intervals until smooth. Let cool for about five minutes.
  2. In a large bowl, mix all other ingredients, besides the white chocolate and the cookie crumbs.
  3. Once combined, fold in the melted white chocolate, then the cookie crumbs until the mixture forms a dough.
  4. Place dough in the refrigerator until firm, about two hours.
  5. Meanwhile, combine the coating ingredients, except for the chocolate chips.
  6. Once firm, use a cookie scoop to form balls.
  7. Roll each ball into the coating, then use a toothpick or butter knife to “score” each ball so it looks like a pumpkin. Top with a chocolate chip.
  8. Enjoy! Store the remainder in the fridge to keep fresh.
