Eggcellent Date Recipes Ideas for Easter

Chocolate-Covered Peanut Butter Eggs — Who doesn’t love a chocolate peanut butter egg at Easter time? Sphinx Date Co. offers a homemade spin on the Reese’s classic that’s easy and festive.

Ingredients:
1 c. fresh Medjool dates
2/3 c. water
½ smooth peanut butter (or almond butter)
¾-1 c. coconut or almond flour
¼ tsp. coarse salt
¼ tsp. vanilla
4 oz. chocolate of choice (milk, dark or other)
Egg-shaped candy mold or other fun holiday shape (bunnies, ducks, etc.)

Directions:
1. Blend dates and water until it creates a smooth mixture, then add peanut butter and blend until combined.
2. Transfer to a large mixing bowl.
3. Stir in flour, starting with a minimal amount and adding more if the texture is too sticky to work with.
4. Add salt and vanilla. Combine.
5. Press mixture into molds, then freeze for about half an hour.
6. Remove from the freezer and gently remove from the molds.
7. Melt chocolate and let cool slightly.
8. Coat the molded pieces in the chocolate and sprinkle with salt.
9. Place in refrigerator to allow chocolate to set.

These delicious treats can be dressed up by using white chocolate as a coating as well as drizzling the finished product with pastel-colored candy melts.

Lamb is a popular main entrée served at Easter. There are many ways to serve lamb at Easter, and one such dish is lamb shank tagine. This one-pot style of preparing this dish makes for easy prep and clean-up. Dates enhance the dish with a little sweetness for balance.

For a sweet treat at Easter brunch, consider a decadent twist on traditional cinnamon rolls — with Medjool date filling! Take a short-cut by using store-bought refrigerated pizza dough!

Cinnamon Roll Ingredients:
16 oz. canister store-bought refrigerated pizza dough
4 Tbsp. butter, melted
1 ½ c. Medjool dates
2 tsp. cinnamon
2 Tbsp. brown sugar
Hot water (for soaking the dates)

Glaze Ingredients:
1 c. powdered sugar
1 tsp. vanilla extract
1 Tbsp. milk of choice

Directions:
Preheat the oven to 350 degrees F.
Soak the dates in hot water for 10 to 15 minutes until they are soft.
Drain, then blend dates into a chunky paste.
Roll out pizza dough and brush the surface with melted butter, then spread the date pasted evenly over the dough.
Sprinkle with cinnamon and brown sugar.
Roll the dough into a log and cut it into eight even pieces.
Place the pieces swirl side up on a baking sheet prepared with cooking spray.
Bake for 30 to 35 minutes, until dough is golden.
Meanwhile, whisk together the powdered sugar, milk and vanilla for the glaze. Set aside.
When cinnamon rolls are done, allow them to cool slightly before drizzling with glaze.
