Crispy Date Pecan Balls

Ingredients

1 stick of butter

¾ cup sugar

8 oz dates – chopped in pitted

1 cup Rice Krispies
-
1 cup chopped pecans
-
1 teaspoon vanilla

1 package coconut
Directions
- Place butter, sugar, and cut-up dates in a heavy skillet. Bring to a boil, stirring often.
- Boil for three minutes – continue to stir often. Set skillet off the burner.
- Add the vanilla and mix.
- Mix together the Rice Krispies and pecans, and add to the date mixture. Mix well. Let cool a little.
Butter hands and roll mixture into bite size balls. Roll each ball in coconut. Makes 4-5 dozen.
Recipe Note
TIPS:
These freeze
well. To freeze– place the balls on a large cookie sheet and put in
the freezer. When frozen, remove them
from the cookie sheet to containers or plastic baggies. If they are not frozen before packing, they
will stick together.
