Bacon Wrapped Dates

Ingredients
- 1 lb Medjool Dates (large, pitted)
- 4 oz Blue Cheese or Chevre
- 8 oz Bacon, sliced in halves or thirds
Directions
Preheat oven to 375°
Slice dates down one half, remove pit, and open.
Spoon your preferred amount of cheese into the center of the dates.
TIP: You may precook the bacon about half way by your preferred method to decrease oven cooking time.
Close the halves of the dates and wrap a half-slice of bacon around the outside.
Secure each one with a toothpick. TIP: Pre-soak toothpicks in water to keep them from burning in the oven.
Arrange in a baking dish or on a baking sheet with sides to catch any grease.
Bake for 30 to 40 minutes in the preheated oven or until the bacon is crisp. Turn dates over after the first 20 minutes for even cooking.
