Almond-Apricot Balls

Ingredients

½ cup butter

1/3 cup sugar

1 egg, separated

½ teaspoon vanilla

1 cup sifted flour
-
½ teaspoon salt

¾ cup chopped almonds and/or shredded coconut

½ cup apricot preserves
-
Powdered sugar - optional
Directions
Cream butter and sugar until light and fluffy. Add egg yolk and vanilla; mix well.
Sift dry ingredients together and add, gradually, to butter-sugar mixture. Mix well and form dough into small balls.
Dip balls into lightly beaten egg white, then roll in chopped nuts or coconut.
Place balls on lightly greased cookie sheet. Press centers lightly. Bake at 300 degrees about 24 minutes. While still warm, fill centers with apricot preserves. Dust with powdered sugar, if desired.
